holy is an adjective used to describe anything dedicated or consecrated to God or for a religious purpose.
For example:-

holey is also an adjective but nothing religious. It is used to describe anything that has holes in it.
For example:-
We used to darn holey socks, but nowadays most people throw them away.
holly (noun) is a shrub. Typically holly has prickly dark green leaves, small white flowers, and bright red berries. IN the UK it is associated with Christmas.
